How about “interactors”? It would imply some level of equality between participants and a flux of effects between them. Another alternative, used in some areas of computing, is ”agent”, though I don’t like it so much. It has many connotations, some of which imply that participants have intent and purpose, which is not always true.

In any case, I think your aversion to the word ”user” is a very sharp observation.
